For some people, Tilapia may not have a lot of taste. But you can kick the flavor up 2 or 3 notches by crusting it with Macadamia Nuts. Delicious!

Recipe serving 4 people:
Prepare: 4 Tilapia fillets, 1-1/4 to 1-1/3 lbs. total
For the dipping mixture:-
Blend: 2 Egg whites 2 tsp. Cornstarch Juice from 1/2 lemon
For the crusting mixture
Combine: 1 Cup Sea Salt and Cracked Pepper Macadamias, ground in food processor - don't grind too much, but enough so Macs aren't too course 3/4 C Panko Bread Crumbs 1 T Chopped fresh parsley (optional) Salt and Pepper to taste (remember, Macs already have S&P)
For Cooking: 3 T Extra Virgin Olive Oil
Preheat oven to 450 F. 1. Combine egg whites, cornstarch, lemon juice in wide shallow dish. 2. Combine ground Macs, bread crumbs, parsley (if using), S&P in second wide shallow dish. 3. Dip fillets in egg-white-cornstarch mixture and then in second bowl pat crumbs on both sides of fillets. 4. Set fillets on rack and let "air dry" 20-30 minutes. 4. Pour olive oil in oven-save, non-stick skillet and sauté fillets until golden brown, 5-8 minutes – depending on size. 5. Flip fillets carefully and transfer to oven. Roast approx. 10 minutes or so, until cooked through – but don’t overcook! 6. Serve!
