Hi, I’m Jennifer Richter with Restoration Recipes, I wanted to share with you my Mac Nut Butter recipe that I made and can’t get enough of.
First I should confess something important to you. I have always disliked macadamia nuts, like a lot, BUT, I’ve always been a firm believer you can love any food if it’s prepared correctly. I recently discovered Royal Hawaiian Orchards Macadamia nuts that I had found Costco. I bought them for my hubby since he loves them and he would not shut up about how amazing they were, so I had to try them.
NO JOKE they taste like POPCORN & a CASHEW had a baby, an amazing combination. Perfectly roasted, salted, sweet, and creamy. My new LOVE!!
I searched all over my local stores for some macadamia nut butter since I was now in love, no one carried it, plus my husband made a great point, I am in love with premium macadamia nuts and I’d just be disappointed with another kind if they made some anyway. Thus the recipe was born.
I made this Mac Butter with 5 tablespoons of nutmeg vanilla honey that my cousins gifted me from HenrysHumdingers.com, along with 1/3 cup organic coconut oil, and 2 cups of the yummy one-of-a kind macs straight out of the bag. No soaking, drying, roasting. They are perfect just as they are and your mac butter will last longer making them this way. I puréed it in the Vitamix and it blended beautifully. I did attempt this in the food processor at first, which was a bust, the consistency was chunky, so I transferred it to the Vitamix for the perfect blend.
I’m OBSESSED with this it’s truly amazing. It brings celery to life in a way never imagined possible. MB&J sandwiches are richer, and eating it off of a spoon is fully acceptable. Check us out on Instagram.com/restorationrecipes for more Royal Hawaiian Mac Nut inspired recipes.
