Halibut is my all time favorite fish. It is a non-oily fish, flakey and just delicious ... so if you love Halibut and if you love Macadamia Nuts, you will love this recipe! It's easy, healthy, gluten free and paleo.
Ingredients -
2 Halibut Filets
1/4 - 1/2 cup Natural Macadamia Nuts
1 tablespoon Coconut Oil - melted
Fresh Pineapple, cilantro and lime juice for a nice pineapple salsa to accompany your halibut.
The How-To -
Preheat your oven to 350 degrees.
Grease a shallow baking dish and set aside.
Chop the Macadamia Nuts until fine. If you use a food processor, less is more in the way of time, only process them for a few seconds at a time.
Brush your Halibut filets with the melted coconut oil.
Press each filet into the chopped Macadamia Nuts, top and bottom, sides, go for it!
Place the filets in the baking dish and bake for 20-22 minutes.
If the tops don't look brown enough for you, place your oven on broil and broil for 5 minutes. Keep an eye on it!
We garnished this dish with chopped fresh pineapple, rough chopped cilantro and fresh lime juice.
We paired it with Cilantro Lime Cauliflower Rice.
